WHAT IS BILTONG?
The word Biltong is a term that describes air-dried beef, marinated in vinegar and spices then hung in circulating air for several days. It is a combination of two old Dutch words - Bil which means meat or rump and Tong which means strip, translated to a strip of meat.
Indigenous peoples of Southern Africa, such as the San and Khoikhoi tribes, have been preserving meat for over 400 years by slicing it into strips, curing each strip with salt, and hanging it up to dry.
The process was further refined by 18th century Dutch settlers, who pioneered inland from the Cape Town colony during the ‘Great Trek’. Their wagons always held stocks of Biltong, which provided high protein nourishment for their perilous journeys. It has since been refined into a quality cuisine embedded in the culture of Southern African people.
The flavors of our heritage passed down through generations fosters an appreciation for the ingredients, techniques, and cultural significance behind the making of Biltong.
